Job Description: |
Location: Khairpur, Sindh
Department: Quality Assurance / Product Development
Reports to: QA Manager / Director Technical
Key Responsibilities:
- Product Development & R&D
- Lead R&D of value-added fruit products:
- Dates: chopped dates, paste, macerated dates, syrup, bars, powders
- Mangoes & Bananas: dried mango slices, dried banana pieces, snacks, puree-based products
- Conduct lab-scale and pilot-scale trials for new products.
- Evaluate shelf life, texture, moisture content, and microbial stability.
Machinery & Lab Equipment Handling
- Operate and troubleshoot food processing equipment: dryers, choppers, paste machines, metal detectors.
- Conduct lab testing for:• Moisture, water activity (a), pH• Microbiological tests (yeast, mold, coliforms)
- Sensory evaluation for quality controlCompliance & Audit Preparation
Prepare and maintain documentation for:
- BRCGS, HACCP, ISO 22000, Organic, and Halal certifications
- Support internal and external audits with complete traceability and corrective actions.
- Regularly update SOPs and food safety documentation.Customer & Buyer Support
- Handle buyer complaints: identify root cause, implement corrective actions, and maintain complaint logs.
Prepare and update
- Product specification sheets
- Buyer response questionnaires
- Technical datasheets and certificates
- Communicate directly with international clients for technical queries and compliance forms.
Documentation & Recordkeeping
- Maintain accurate records of:
- Product testing and batch quality reports
- R&D trials and outcomes• Corrective and preventive actions (CAPA)
- Calibration and maintenance logs for lab and production equipment
Requirements:
- B.Sc. or M.Sc. in Food Science, Food Technology, or Food Engineering.
- Minimum 3 years of experience in fruit processing (dates, mangoes, bananas preferred)
- Hands-on experience with R&D, lab testing, and quality documentation.
- Familiarity with BRCGS, HACCP, Organic, and Halal systems.
- Proficient in Microsoft Office (Excel, Word) and documentation tools.
- Strong communication skills for internal coordination and buyer interactions.
